Why would a rangetop burner run weak?

High-output burners are sensitive to supply. A regulator that is off, an orifice that is the wrong size, or a propane conversion done incorrectly can all starve the flame, so we check them before replacing a burner.

What is the island trim kit for?

It finishes the edges when the rangetop is placed in an island, rather than against a wall. During service we make sure that trim is sealed, since liquid reaching a gap can harm what lies underneath.

Does the rangetop have the same simmer capability as a cooktop?
