Thermador documents that difference as a design choice, so a homeowner remarking that the lower oven has fewer settings is describing a working appliance. Neither cavity has a meat probe.

For repairs, the lower oven’s short list of modes means fewer heating elements to test, although its wiring is shared with the upper oven. Why does my lower oven offer so few settings?

It was built that way. Thermador's spec sheet gives the upper cavity 11 heating modes and the lower only 5: Bake, Broil, Roast, Warm and Sabbath, so nothing is broken.

Can I use a meat probe in either oven?

No. Both cavities show 'Sensors: Not Applicable' in Thermador's listing, so this model has no probe at all. Use a separate thermometer for roasts and keep an eye on the display.

The lower oven will not bake but the top one does. What next?

Note any display message and leave the lower oven off. A bake loss there often traces to its element or the shared wiring, which we can test quickly because the lower oven is simple.
